The water based extraction of tea oil mainly refers to the enzymatic and water based methods. The principle of water substitution method is to use water to replace the position of oil in oil cells, so as to release oil. Then, based on the immiscibility of water and oil and the difference in density between water and oil, a method of separating oil using centrifugal force is used. Guo Weibao et al. studied the optimal process conditions for the extraction of tea oil by water substitution method: the solid-liquid ratio was 1:4.5, the extraction temperature was 75 ℃, the extraction time was 2.5 hours, the pH was 9.0, and the extraction rate was as high as 90.19%.
